Plate in hand

Today, batch by batch
ताज़ा · दिन भर
Urn on. First chai of the morning to the shopkeepers.
Bhatura dough rested. Chola on a slow flame.
Dosa griddle at full heat. Sambar, pot two.
Chaat counter opens. Puris cracked to order.
Last order. Whatever is left, we do not sell tomorrow.
